For example, what you’ll see being made in Kagoshima is mugi-miso made from barley and soybeans. This miso is a bit sweeter than what you may have tried elsewhere in Japan. Learn the whole process from professionals with over 90 years of experience. Finish the tour by making your own and taking home 2 kilograms of the delicious paste to ferment.
