Along the Nagara River, fishers form an unlikely duo with trained cormorant birds in order to catch ayu sweetfish in this 1300-year-old practice called ukai. Try the local cuisine of the area right out of the river in a variety of unique forms. This nine course meal features ayu that has been charcoal-grilled, fried tempura style, and rolled into sushi.
